Day 8 : Golden Gate Grilled Cheese

Who doesn’t love a grilled cheese sandwich?  As a kid they were a regular lunch item in our house.  We’d have ramen with grilled cheese triangles on the side…. oh and ketchup for dipping of course.  Back then I was a bit pickier than I am now so a grilled cheese sandwich was just that…. bread & american cheese grilled in a skillet!  Later on I discovered that the addition of lunch meat made it even better, and from there I have tried many versions with all sorts of extras including mushrooms, sauces, various cheeses, etc.  Tonight’s sandwiches had the addition of avocado, which was new to me in a grilled cheese sandwich, but I really enjoyed them.

I got the recipe from Food.com again…. yeah I go there a lot lol…. and by the description included with it, the recipe came from Sunset Magazine originally.  From the perfectly golden parmesan crust, to the spicy kick from the pepper flakes, and the wonderful blend of flavors from the turkey, muenster cheese, cilantro, and avocado, these were definitely a 5 star sandwich!  Both Jeff and I easily agreed, and his only complaint was that he wanted another one!

I am not sure if my bread loaf was just on the smaller side or what, but the recipe called for 4 slices…. making two sandwiches.  My slices seemed rather small so I ended up getting 4 sandwiches out of this.  I used low fat parmesan on these, and ended up putting 4 slices of turkey on each.  They were very simple to throw together and looked beautfiul with their golden crusts on the plate when all was said and done.  BTW, I LOVE my Rachel Ray skillet!

Golden Gate Grilled Cheese

Serves : 2                               Time to make : 15 minutes

Ingredients :

  • 2 tablespoons softened butter
  • 1 teaspoon minced garlic
  • 1/2 teaspoon red chile, flakes
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 1 cup coarsely grated parmesan cheese
  • 4 freshly cut slices from a sourdough loaf
  • 6 ounces thinly sliced turkey
  • 1/2 avocado, thinly sliced
  • 1 tablespoon chopped cilantro
  • 2 slices muenster cheese

Directions :

  1. In a small bowl, combine butter, garlic, and chile flakes. In a medium bowl, whisk egg and milk. Spread parmesan on a plate.
  2. In a large frying pan, melt half the seasoned butter over medium heat. Dip 1 bread slice in egg mixture, coating one side only. Dip coated side into parmesan. Place to one side in frying pan, cheese side down. Repeat with 1 of remaining bread slices. Arrange turkey, avocado, cilantro, and muenster on slices, dividing evenly.
  3. Dip remaining bread into egg and then into parmesan. Arrange on sandwiches, cheese side up, and cook over medium heat until undersides are golden brown, 3 to 4 minutes. Lift sandwiches and add remaining butter to pan; flip and cook until second side is golden brown, 3 to 4 minutes more.
