Day 123 : Easy Teriyaki Chicken Burgers

The title says it all for this one.  With only 5 ingredients it doesn’t get any easier than this.  It’s the perfect thing for a busy weeknight meal, or even for a luau themed get together so you can keep it simple and enjoy the festivities.

Make sure you leave time for the chicken to marinate.  The longer the better, but at least 6 hours is ideal.  I like to grill the pineapple for a couple of minutes too, and I find that fresh pineapple is best.  You can definitely use canned though too, and I have done that before. If you use the canned ones you might want a couple per burger since they are sliced a bit thin.

My only complaint about this recipe, if you can call it that, is the fact that the chicken breasts end up being too big for the buns and I am not a fan of so much meat sticking OUT of a burger bun.  You can choose smaller breasts, or even cut them if you prefer.

Easy Teriyaki Chicken Burgers

Serves : 4                          Time to make : 20 minutes (+ marinate time)

Ingredients :

  • 4 boneless, skinless chicken breasts
  • 1/2 cup teriyaki sauce
  • 4 slices pineapple
  • 4 burger buns
  • 2 T. mayo

Directions :

  1. Place chicken in a bowl or ziplock bag with marinade, cover, and place in fridge for at least 6 hours or overnight.
  2. Grill chicken until cooked through.
  3. Assemble burgers with mayo on bun, chicken and pineapple slice on top.
